Macadamia Nut Pesto


Makes 1 cup

2 cups Basil, tightly packed fresh leaves
2 Garlic cloves
1 tsp Lemon juice, fresh-squeezed
Baking & spices
1/2 cup Olive oil, extra-virgin
1/3 cup Macadamia nuts, toasted
1/2 cup Parmiggiano-reggiano cheese, grated

Wash the basil. Place all ingredients into a food processor; whirl until completely chopped and forms a smooth consistency. Season to taste with salt and pepper and pulse a few more times. Taste again and adjust seasonings, if needed
